Heart-Shaped Eggs

I will finish up with the summer vacation posts soon but I wanted to show you this cute omelette idea I found on Pinterest: heart-shaped eggs!

First take some eggs and beat them. I had my little assistant help me crack and beat the eggs while I sautéed some carrots and spinach in butter. Then remove the sautéed veggies and put some of the beaten eggs in the pan. Sprinkle with some veggies and spices to taste and cook. Then start rolling the eggs up and put them on the side of the pan.Repeat with more egg mixture. Be sure to reserve some egg mixture for another step. Coco loved eating the carrots before I got them mixed in the eggs. (Note to self: prepare some carrots this way for dinner instead of always raw.)Here is the finished roll of eggs:Take the egg log out of the pan and let it cool. Then slice it in 2″ slices. Once cut, cut each slice in half diagonally and flip one piece over so it makes a heart. Place the two heart halves back into the pan and using the reserved egg mixture put some onto each heart to get the two pieces to adhere to one another. Repeat on the other side. If some drips it can be cut off later.

And that’s it! Remove from pan and enjoy your heart-shaped eggs!  🙂
